Article Abstract:
The x-ray and neutron reflectometry measurements are used for studying the structural changes caused by chemical denaturation of a surface excess of the bovine milk protein, [beta]-lactoglobulin. The interfacial free energy of unfolding in the absence of a denaturant has shown that the air-water interface has a destabilizing effect on protein structure.

Article Abstract:
The deformation of a protein, myoglobin and two derivatives, apomyoglobin and peptide (1-55) is studied at the air/water interface. It is proposed that the tertiary structure of the myoglobin and apomyoglobin is modified at the interface and it is the alpha-helical secondary structure, which is the major determinant of the observed layer thickness.

Article Abstract:
The isotopically substituted concentrated emulsions related microemulsions by small angle neutron scattering (SANS) is examined. It was found that the surfactant concentrated micro-emulsions of water, hexadecane and surfactants overall volume percentage are 6%, 31%and 60%.
